500g or 2 1/2c AP Flour 150g or 3/4c sugar 6 large eggs 1 lt or 2 1/4c whole milk
Using 1% milk? Butter is 80% fat, so use that. Whole milk is 3.5-4% fat so to increase fat by 3% would that be 3ml of butter, which is just over half a teaspoon, per 100ml or .42c milk? 1 tsp is 5ml, so you can substitute an overflowing tsp of butter per 200ml. In this recipe, five teaspoons butter for the liter, or 2 1/4c milk.
Whisk 6 eggs and 150g or 3/4c of sugar together. Add 200ml or .85c milk and whisk. Add 500g or 2 1/2c flour and whisk until fully blended. Add four more 200ml/ of milk whisking smooth each time.
